Chef Monica Galetti launches seasonal menus for Singapore Airlines Suites, First Class, and Business Class customers departing from the UK
Singapore Airlines has launched an exclusive in-flight menu with acclaimed chef and TV personality Monica Galetti on flights departing from the UK. The gourmet dining experience includes a refined four-course menu for Suites and First Class customers and an indulgent three-course menu for Business Class customers.
Taking inspiration from her South Pacific roots and classical French training, Chef Monica’s menu offers a fusion of flavours with locally sourced produce. There are four menus for each season to enjoy, including her signature Hokey Pokey dessert – a nostalgic chocolate and honeycomb treat inspired by her childhood in New Zealand.

Chef Monica Galetti said: “After months of menu development, I am delighted to unveil my exclusive menu for Singapore Airlines. Bringing fine dining to customers at 35,000ft is my most exciting culinary journey yet. From fresh lobster to fine caviar and warming soups to locally sourced lamb, customers can expect a world-class in-flight dining experience on board Singapore Airlines flights.”
Four seasonal menus will be available for Suites, First Class, and Business Class customers (see Annex below). The airline’s award-winning wine collection will complement each menu.

Singapore Airlines has a long-standing commitment to in-flight dining excellence, and currently works with five world-renowned chefs under its International Culinary Panel in the design of its Suites, First Class, and Business Class menus. Two of the chefs are Michelin star recipients, collectively holding 10 Michelin stars. Singapore Airlines also has an international panel of wine consultants, including Oz Clarke, who curates the selection of wines available on board.
Along with Chef Monica’s menu, Singapore Airlines Suites, First Class, and Business Class, customers can select a European or Asian menu for their onboard dining experience. For a wider selection of meals, they may also opt for the Airline’s ‘Book the Cook’ service at least 24 hours prior to their flight departure. The selection of ‘Book the Cook’ meal options features dishes created by the Singapore Airlines International Culinary Panel, including globally recognised chefs Matt Moran and Georges Blanc.

Monica Galetti’s Autumn and Winter Menus for Singapore Airlines
- Monica Galetti’s exclusive seasonal menus are available from October 2024 until November 2025 on flights departing from the UK. The Spring menu is available from March to May, and the Summer menu from June to August. There are two separate menus, one for Suites and First Class customers and one for Business Class customers.

About Monica Galetti
Monica Galetti is a highly renowned chef, author and TV presenter on BBC Masterchef and Amazing Hotels. Born in Samoa, Monica developed an early interest in food – a hugely important part of Samoan culture, before moving to New Zealand where she trained as a chef. Moving to Britain in 1999, Monica was introduced to fine dining and classically trained under the helm of Chef Michel Roux Jr at two Michelin starred Le Gavroche. In March 2024, Monica was named the UK Guest Chef for Singapore Airlines, with her menu launching on board from October 2024.
