Banyan Tree Phuket has unveiled an elevated dining experience at the resort with the reimagination of its signature Thai restaurant, Saffron, alongside the debut of Saisons, a new cheese and charcuterie lounge. Reflecting the growing importance of gastronomy in travel, these additions introduce a contemporary approach to Thai fine dining and a refined European-inspired social space, further enhancing the resort’s culinary landscape.
Saffron, Banyan Tree’s signature Thai restaurant, has undergone a thoughtful transformation in both culinary philosophy and architectural design. The newly renovated space presents a modern interpretation of Thai fine dining while retaining the restaurant’s signature charm, including its serene lagoon views.
The redesigned restaurant now offers expanded seating for up to 92 guests and features two new private dining rooms, ideal for intimate celebrations and special occasions. At the helm is Chef Tipaporn Phianthong, Chef de Cuisine of Saffron, who leads the culinary vision both in Phuket and across the brand globally.
